Day 2 Xian-Guilin by Flight

The locals always say that a Xi'an tour is not complete without visiting the Xian City Wall, which has been stretched round to guard the inner city since the 13th century. Even nowadays, the massive, ancient City Wall is still strong and solid. Afterwards, you can smell the ever-present aroma of roasted meat, noodles and bread through the Muslim Street, which bustles with hordes of locals and tourists. Later, go to Great Mosque which was first built in 742 during the Tang Dynasty when foreign envoys gathered in Xi'an to share and exchange their ideas on religion, business and culture with the Chinese. In the late afternoon, catch the flight to Guilin. Upon arrival, your tour guide will greet you at the arrival hall then send you to the local hotel to have a rest.

　　Yangshuo beer fish is one unique local dish with spicy and fresh meat, without any stink. The pleasant flavor of beer and fish can make the diners have a very good appetite. Yangshuo beer fish is made by the alive carp of Lijiang river Yangshuo, fried by tea oil of north mountainous area of Guilin, and the up-scale beer of Guilin. Yangshuo beer fish itself bears crispy and tender pleasant flavor.

　　The dish was originally made by a few private restaurants. Nowadays, the dish prevail in most restaurant especially those of western street of Yangshuo where now grow into a gourmet bazar. Many large stalls offer this dish. For restaurant owner, the dish is a brand dish, however for diners, the dish is a dish offering best flavor. Nowadays, the dish is popular among foreigners too.

　　“Once try it and unforgettable” is an accurate remark on the dish. The unique flavor of Yangshuo beer fish attracts many tourists who all strongly appraise and recommend it.

　　The cooking ware is very special. Fish was put above a pan, beneath the pan is a plate filled with water and beneath the plate is the fire, unlike the Sichuan hot pot is directly cooked above the fire. In this way, the fish is not easy to be over-cooked for heating evenly.

　　While having beer fish, the first feeling is the fish skin so wonderful. The fried fish skin is so crispy, dipped into sauce, form a totally new tong experience. Another feeling is that it is so stupid without pepper, for best taste, the hotter, the more perfect for this dish.

　　It is weird, once Yangshuo beer fish moves to other places from Yangshuo, it will lose all original pleasant flavor. Thus diners only can taste the beer fish in Yangshuo. Yangshuo beer fish has became a brand dish for local food. The best Yangshuo beer fish is made by carp from Lijiang river or Yulong river for the reason that the fish is not stinky, but offering more nutrition.

　　How to cook Yangshuo beer fish:

　　1.Seasonings: sliced tomato; sliced green and red pepper; shred ginger; garlic without skin; diced green onion; and ground coriander.

　　2.Carp is removed from entrails and washed clean but keeping scale. The fish is dried and cut into slice.

　　3.The pan is rubbed with ginger, once the pan is heat, the olive oil is put inside.

　　4. Sliced fish was put inside the oil and fried slowly by little fire. Once it is fried, looks yellow and crispy, the fish carp bend, it was taken out.

　　5. The pan is washed clean, refill with olive oil, then fried shred ginger and garlic.

　　6. The sliced fish was put inside, added with sauce, beer, covered with lid, cooking for 10 minutes.

　　7. Green pepper and red tomato were added together with hot pepper, continuously cooking three minutes and well-done.

　　Reminders:

　　1.Scale need not be taken off from Yangshuo beer fish. Some diners prefer the bend scale and if not getting used to, scale can be taken away too.

　　2.Before fish is put inside the pan, fish has to be dried for avoiding to splash hot oil, and the same avoiding the fish skin brittle.

　　3.Sauce and hot pepper contain salt and need not put extra salt.

　　4.While cooking fish, avoid move for keeping fish complete.

　　The Tang Dynasty Music and Dance Show has its roots in folk fetes, when dances were first performed by people as part of rituals of prayer for a good harvest or a better life. Over thousands of years, the dances developed from a few simple postures or gestures to become delicate and artistic reaching a peak during the Tang Dynasty. The show presented today is a recreation of a traditional entertainment attributable to a great variety of historical records and relics. The Tang Dynasty Music and Dance Show has now become a classic entertainment that has been warmly appreciated by audiences running into hundreds of thousands for more than twenty years. The production has toured many cities in China as well as numerous foreign countries such as Japan, Russia, Korea, Singapore, Norway, Denmark, etc.

　　Liusanjie is a pretty singer of ethnic Zhuang in fairy tales. Around her, there are many colorful sagas. In 1961, Film Liusanjie gave birth. In the movie, the pretty Liusanjie and wonderful landscape of Guilin together with the folk songs prevail across China and south-east Asian. Since then, one generation after another generation, visitng Liusanjie and capturing her pretty folk song become a dream. Liusanjie Impression Show now is an arts exclusively without too much reality.

　　Liusanjie Impression Show went to public on March 20, 2004. The officer of World Tourism Organisation remarks: the show can not be seen from anywhere except China, and from anywhere in the world, it is worthwhile coming for watching the show. The area for the performance is granted as the best resort by world tourism organization and the national culture industry demonstration base.

　　Liusanjie Impression Show made by famous director “Zhang, yimou”, “Wang, Chaoge” and “Fan,yue” is one of the largest life performance in Impression Serials. The spot is located on the junction between Li River and Tianjiahe, facing opposite to Shutong mountain across the water. The Stage is a two-kilometer Li river water area with 12 peaks as backgrounds, very magnificent and ranked as the largest water and mountain theatre.

　　There are seven parts in the performance. The theme is the classic tale “Liusanjie” as the performance fully shows the folk songs, ethnic custom and Li River fishery in arts. It is worth mentioning that 600 participants are all local fishermen and ethnic girls, not after professional training. For the reason above, visitors enjoy the real aboriginal life in Li River. The picture is rather magnificent with the background of real water landscape, lantern, music and dance.

　　In the performance, the folk song is performed by local dialect and difficult to understand. The visitors need not understand what the song means, instead feel the Li River with heart. While watching performance, the higher seats lies, the better panoramic-view on the whole magnificent state.

　　Liusanjie Impression Show is a real luxurious party which constructs a vast stage with dazzling lanterns and promote landscaping of Guilin. The whole stage is covered by lush greens planting with tea trees, Tail bamboo and grass. The lanterns and acoustic system are fixed and hidden in the environment. The watering stage is all made by bamboo raft. Without performance, the bamboo rafts could be disjoined and hidden, without any impact on Li River. Over 100 acres building lands, drum tower, bridge and VIP area all gave off a deep folk nature. The visitors marvel at that here is not an iron nail in whole project. The audience seats are made by green terrace with a 180-degree panoramic view of watching performance and landscape from two kilometers, at the same time it fits for dispelling flood. There are total 2200 seats including 2000 normal seats plus 180 VIP seats and 20 presidential seats. There are over 600 actors after special training together with costumes of different ethnics including Zhang, Yao and Miao.

Yes everything was spectacular and fascinating very professional and prompt services. There were beautiful places to explore and to see in the 4 hours that we had. The comfort and beauty of the China was incredible, The history, culture and way of life of the local people we bumped into during the layover was beyond our expectations. Hiking on the Great wall after driving through a small remote countryside was very relaxing and rejuvenating. It was the best trip ever to experience on a few hours.

We had not previously used a travel agency for touring. The crew including the driver and tour guide were really funny, friendly and knowledgeable. Despite having limited time we still had free time allowing for shopping and grabbing a meal and drinks. Highly recommend this layover in Beijing.

Well worth it! Jenny was really nice and incredibly helpful with the immigration process after airport personnel originally escorted to the wrong area and didn’t want to allow leaving the airport. She takes great photos! Beautiful views and fun to take the toboggan down. Wasn’t too crowded on this day - and definitely worth doing with a 7 hour layover. Nice car and driver too.
